Halal Chicken Musakhan
This dish is considered Palestine’s national dish.
Ingredients For the chicken:
2 chicken breasts.
3 large onions.
3 garlic cloves
4 bay leaves.
1 whole cinnamon stick.
5 cardamom pods.
½ tbsp of 7 spices.
½ tbsp of black pepper and salt.
2 dried limes.
½ cup of olive oil.
4 tbsps of sumac.
Filo pastry or tortilla bread.
Method
- In a pot, add the chicken breasts.
- Add the list of spices above and the garlic cloves.
- Cover the chicken and let it cook for 30-45 minutes, removing all the foam formed on top.
- Once cooked, remove the chicken from the pot let it rest and cool down.
- Slice 3 large onions into thin slices, and add them to the pot after getting rid of the broth.
- Add half a cup of extra virgin olive oil and cook on medium heat, making sure the olive oil isn’t too hot, allow the onions to slowly cook and stir it frequently until it’s caramelised.
- Shred the chicken into very thin slices using a fork and cooking gloves if the chicken is still hot.
- In a bowl, add the shredded chicken and onion together then add 4 spoons of sumac.
- Mix well so everything is blended well.
- Fold the flatbread in half and cut down the middle so you have 4 halves in the shape of a triangle.
- Take one triangel and place the chicken mix on the wide end of the bread leaving 2 inches to the edge, tuck in the sides inside the roll, and start rolling firmly without ripping the bread but to ensure the filling doesn’t fall outside the rolls.
- Place the rolls in an oiled oven tray, always use olive oil throughout this recipe for a consistent taste.
- Brush the rolls with olive oil and sprinkle some sumac on top.
- Place in a preheated oven to 180 ℃. Bake until the top layer is golden, this takes between 15 to 20 minutes, flip to both sides to get both sides golden.
- Garnish with more sumac, chopped parsley and grilled pine nuts and drizzle some pomegranate molasses on top.
- Serve with yoghurt and lemon slices.
